Region: Champagne, France (specifically in southern Champagne in the Aube and Côtes des Bars)
In the cellar: While other Champagne makers focus on the art of blending grapes, Dominique Moreau specializes in single varietal sparkling. Her Résonance is from hand harvested Pinot Noir grapes that are wild fermented in stainless steel and aged for 24 months. No dosage is added.
Farming method: Biodynamic; Grapes come from 35-40-year-old vines planted in clay and limestone soil
Tasting notes: Mineral driven with saline and slight notes of under ripe cherries and citrusy acidity. Delicate yet precise bubbles. Simply stunning!
