In the cellar: Pre-fermentation cold maceration for 4 days to extract varietal aromas, followed by fermentation in stainless steel tanks. Post-fermentation maceration with the skins for 7 days. After racking, maturation requires contact with fine lees for 5 months.

Tasting notes: Rus Jimenez’s Macabeo is a vibrant expression of Manchuela, with the cool Solano wind preserving the grapes’ natural acidity. This diurnal temperature shift helps maintain complex flavors without over-ripening. You’ll find bright notes of apricot, kumquat, and spicy peaches, along with tea-like tannins reminiscent of Georgian orange wines. Enjoy with pad Thai, butternut squash soup, or grilled sausages and peppers.
