Roaring Forties, named for the winds that tear around the world below latitude 40°S, is our farthest travelling cheese. It comes to us from King Island Dairy on King Island, a small landmass located between mainland Australia and the state of Tasmania. King Island Dairy sits on the west side of the small island, population 1800, where cows graze on healthy grasses glazed with ocean spray. This makes their milk both rich and a touch salty, perfect for the blue Roaring Forties.

Cheesemaker Ueli Berger, the grandson of a cheesemaker and the son of a dairy farmer, moved from Switzerland to King Island in 1998 to make this savory, creamy blue. He coats the cheese in wax to protect it from oxygen, which helps the cheese retain moisture for a rich, smooth texture and promotes sweet, slightly nutty flavors. While it is a stronger blue, the sweetness balances the punch of flavor, keeping it quite approachable. Crumble chunks of Roaring forties onto steak, mix it with butter and spread it on cornbread, or just dive into your piece with a cracker and drizzle generously with honey.
