5 Cheeses We Can't Stop Dreaming About

1. Chabichou du Poitou

This little goat cheese with a name like a Pokémon has been on my mind for days. Nay, weeks! Its wrinkly exterior eminds me of a Shar Pei puppy, and its small size makes it cute as a button. In my dreams, I eat the whole wheel of fudgy, cakey goat cheese with a glass of cold, minerally rosé, preferably on the deck of schooner with Michelle Obama and Chris Hemsworth.

2. Bernstein Grube

This semi-firm Danish cow’s milk calls to me in a dreamy voice, “Kiri…Kiri, hey, melt me…I’ll make the perfect breakfast sandwich…don’t you want a breakfast sandwich…don’t you want me…” It is rich, so rich. It’s clear the Danes have taken their strong butter culture and mooshed it into their cheesemaking with very delicious results.

3. Cabriolait

Ooooh yes, Cabriolait. It reminds me of a café au lait with its rich milkiness. My friend and I melted this semi-firm goat’s milk cheese onto smash burgers recently and I can’t get it out of my head! The tang of goat’s milk with a slight sweetness and lush nuttiness of cashew butter goes with pretty much anything. When I take a bite of Cabriolait, I get the same feeling as being wrapped in a warm towel after a swim in a cold lake. Preferably, Michelle Obama and Chris Hemsorth are there again. And also Beyoncé.

4. Parmigiano Reggiano G. Cravero

One of my most common daydreams involves the Italian countryside, a villa, a porch, somehow overlooking rolling hills of farmland and a beautiful lake and the Alps, all at once. In that daydream, I’m enjoying the view as the sun goes down and eating craggy pieces of Parmigiano Reggiano drenched in fruity olive oil. I’m sitting there with Dario Cecchini, the butcher from the most recent season of Chef’s Table who talks about beef like a philosopher poet. And probably Beyoncé, Michelle and Chris are there, too.

5. Summer Snow

Fluffy and white like a light fallen snow, I dream about this cheese, especially now that we’ve gotten perfect batch after perfect batch. Just the name brings me to Vermont, its birthplace, and one of my favorite places in the world. I have experienced a few snows there in May and June when it should definitely not be snowing anymore. However, if it’s in a dream, it can be sunny all the time! Or maybe it’s raining like jellybeans and balloons! Either way, I hope Summer Snow the cheese will be there.
