Brillat-Savarin


It was our 4th Birthday a few weeks ago! September is always a reflection for the team here at the shop. It’s the end of the summer, the beginning of the busy season, and most importantly, a time of thanks to you, our friends, for your warm enthusiasm and patronage. It’s a time to ask ourselves, what elements aligned to make this year successful? There are many factors of course, but at the epicenter, undeniably, is that great uniter of people, the thread that weaves us together and brings us happiness: the love of good food!

Jean Anthelme Brillat-Savarin (pictured below), the 19th Century gastronomer and food-essayist loved everything to do with hospitality, good food, and drink. His sharp wit has leant us a library of cheeky commentary on food. A true kindred soul, and the namesake of our most decadent cheeses, it is no wonder we have selected this cheese to be one of those featured at our birthday party!

Brillat-Savarin is a triple cream cheese usually from Burgundy or Normandy, which achieves its dense, buttery texture from the generous addition of cream to whole milk. The cheese is then ripened for just a month or two, during which it develops its distinctive, snowy-white, bloomy rind.

And to end, as Mr. Brillat-Savarin once said, "A dessert without cheese is like a beautiful woman with only one eye." And while we think one-eyed women rather lovely, we do agree that the absence of cheese in any meal or celebration is a travesty.
